कवड्या दही.

Come summer and the curd becomes the integral part of our everyday meal.
So far everyone must be a perfect (home) curd maker. And nothing can beat homemade creamy curd for sure.
So here is my way of दही जमवानू in earthen pot.
Now a days it's very easy to get all types of earthen pots.
Buy two of average size curd pots.
Wash them thoroughly two three times with scrubber only, no soap. Fill them with water and keep aside for a day or two. Before using them wash-scrub it and fill it with drinking water and keep it on the gas. Slow flame.
Let the water and pot become hot considerably. Mean time take a spoonful of not to sour curd (if it's too sour take little)(all shops those sell mataka dahi absolutely use very little 'virjan', sour dahi. As per them less the 'virjan' thicker the curd)
Beat the curd('virjan') finely in to any steel pot with spoon, add few spoons of cream and luke warm milk again and mix-beat thoroughly. Now take the desired quantity of luke warm milk and mix it with this beaten mixture by using two pots. Just pour from one pot to another 5-6 times till it becomes foamy and arieted.
Now remove earthen pot from the flame. Throw away that hot water from the pot and pour this mixtured luke warm milk in to that pot, cover it and keep it aside for 6 hours. And enjoy your breakfast-meal with thick, white 'कवड्या दही'
This settling duration depends on seasons and local temperature also.
I keep these pots in microwave for over night.

Why curd in earthen pot ?
The porosity of earthen pot takes away excess water from the curd and makes it more thick, in this pot it doesn't become sour very fast and remains considerably cool. And tastes really better.

About cleaning the pot.
Let your maid wash the pot thoroughly, but still before using, it's compulsory that it's washed again and water is heated in that. Once in a while without water also you can heat the pot on slow flame. But be careful that it doesn't crack up because of over heating. By this type of dry heating
you burn the soaked fat from the milk.
And be extra careful about fungus formation also, specially in monsoon.

For best results and good health it is advisable that before using it,
clean-scrub(without soap) it thoroughly with your own hands.
